Pies, Pies, Pies!!!… Derby Pie Baby

Run for The Roses Pie III

based on a recipe from allrecipes.com

  • 1/2 c. melted butter
  • 3/4 c. sugar
  • 1/2 c. flour
  • 2 eggs
  • 2-3 T. bourbon
  • 1-2 T. vanilla
  • 1 c. semisweet chocolate chips
  • 1 c. chopped walnuts
  • 1 unbaked crust (homemade obviously preferred!)

Preheat oven to 350 degrees.

Roll out your dough and put into a pie plate. Try to make a fancy shell if you want! I tried REALLY REALLY hard this time!

I tried the “pinch” technique

It went pretty well!

I was stoked about it when I finished!

When the crust is done, spread chocolate chips and nuts in the bottom of pie shell.

In a mixing bowl, whisk melted butter and sugar together. Mix in flour. Beat the eggs slightly and mix into the creamed mixture. Stir in bourbon and vanilla. Pour filling evenly over the chips and nuts in the pie shell.

Bake at 350 degrees for 30-40 minutes! Take it out and let it cool on a wire rack.

Pretend to not be bummed at how BAD the crust looks! BOO! The pie crust I used works best on fruit pies:)

Cut a nice big slice

Serve warm with vanilla ice cream!

    okay you have officially made pies one of my top favorite desserts!!! Derby pie has always been high on the list…why do I never think to make my favorite things? Oh man, i am ready for some pie baking time:)
