The credit for the meals I now make are 70% Le Creuset, 20% new recipes and the mini-10% to the chef:) I have been able to make all kinds of fancy things now with my lovely new dutch oven! I have been new recipe searching and I found something in here that looked interesting and fun.
And it has bacon in it. I knew my husband would FREAK. That meat and potatoes man loves him some bacon (and does not fall for turkey bacon… no matter how hard I try!) With the lack of bacon or creamy pasta sauces up in the Lopina household this meal was a special TREAT!
Baked Cheese Tortellini with Bacon
4-8 slices bacon
1 small onion diced
handful of coarsely chopped mushrooms
sea salt and pepper
sprinkle of cayenne to taste
2 T. all purpose flour
2 c. milk
16 ounce package of cheese tortellini
1/2 c. grated Parmesan, Mozzarella or other yummy cheeses
1. Cook bacon over medium heat until browned and crisp. When done, transfer to a paper towel to drain. Crumble bacon in 1/2 inch pieces. Add onion, mushroom and garlic and saute deliciously. Spice it up with salt, pepper and cayenne. At this time your husband will say “it smells good in there!” and you will get excited and hope it tastes good too.
2. When onion is soft and is making those delicious brown bits, add flour and cook, stirring about 30 seconds. I added extra flour to make sure it was nice and thick:) Slowly add milk, whisking constantly. Add tortellini and bring to a boil over medium-high heat stirring occasionally. Reduce to a simmer, cook, stirring often until liquid has thickened.
3. Remove from heat, stir in bacon and a handful of cheese. Sprinkle cheese over top and broil about 3-5 minutes (make sure you watch it!) until the top is golden brown and cheese is bubbly.
