Tasty Tuesday – Gazpacho

Have you ever had gazpacho? It’s totally weird. It’s basically cold chunky vegetable/ tomato soup. It’s strikingly similar to salsa if we’re honest with ourselves. Anyway, my dad used to make it for us a lot growing up. His is PHENOMENAL!! (Just like everything else he makes.) I should probably ask him for his recipe for the next time I make it. But for now – – I recently made some with a recipe from the south beach diet book. Here it is with a couple tweaks:)

Gazpacho

from The South Beach Diet book

Ingredients:

  • 2 1/2 c. vegetable juice
  • 1 c. peeled, seeded, finely chopped fresh tomoatoes
  • 1/2 c. finely chopped celery
  • 1/2 c. finely chopped cucumber
  • 1/2 c. finely chopped green bell pepper
  • 1/2 c. finely chopped green onion
  • 2 T. olive oil
  • 1/2 T. minced garlic
  • 2 t. finely chopped parsley
  • 1/2 t. salt
  • 1/2 t. Worcestershire sauce
  • 1/2 t. black pepper

Combine all together. Season to taste. Cover and refrigerate overnight. Serve cold:) (Please note – I chopped up some spinach and threw it in there… it wasn’t my best idea ever. But that is why you’ll notice giant green leaves!!)
