Please Sir I want S’more (BROWNIES!)

S’mores are THE CLASSIC camping dessert. My family went camping a lot when we were growing up. If you know my parents now, this is laughable. Actually, if you know me right now, this is also laughable.

I’ve become a little more high maintenance as I’ve gotten older and the thought of sleeping on the ground makes me want to curl up on the couch and cry. However… the part about camping that I do like? Sitting around a campfire talking. Accidentally lighting a marshmallow on fire and then smushing it between 2 graham crackers with a square of chocolate. S’mores, baby:) And if we’re talking about s’mores in brownies?!? Well that just makes me want to curl up on the couch and cry… for a whole different reason! :)

S’more Brownies

  • 1 1/2 c. Flour
  • 2 t. Baking powder
  • 1 t. Salt
  • 1 c. (2 sticks) softened unsalted butter
  • 6 ounces unsweetened chopped chocolate (OR 1 1/2 c. Cocoa powder PLUS 6 T. Unsalted butter)
  • 5 large eggs
  • 1 1/4 c. Dark or light brown sugar
  • 1 c. Sugar
  • 2 t. Vanilla
  • 1 c. Graham crackers, roughly crushed with your hands (about 8+ squares)
  • 12 big marshmallows
  • 6 marshmallows, diced to add into the batter (optional)

Preheat oven to 350 degrees. Butter or spray a 9×13 pan with 2 inch sides. Combine flour, baking soda and salt in a small bowl. *If using cocoa powder, skip the following steps and see the star below* Stir butter and unsweetened chocolate in a medium sized bowl over a heavy saucepan of simmering water. Stir chocolate and butter in the double boiler until melted and smooth (or melt in microwave).

Beat eggs, sugar and vanilla in a large bowl to blend. Stir in warm chocolate mixture then dry ingredients.

*IF USING COCOA POWDER– Beat the 1 c. + 6 T. butter until smooth. Beat in 1 1/2 c. cocoa powder. Beat in eggs, sugar and vanilla. Stir in dry ingredients.*

Fold in Graham crackers and and 6 diced marshmallows (if using) into the batter. Pour batter intro prepared pan and dot with 12 large marshmallows. Bake until toothpick inserted into center comes out with moist crumbs attached, about 30-40 minutes. Check on them midway- if your marshmallows are browning too quickly, put the pan lower in the oven or cover with foil.

Marshmallows will be browned and puffy but will deflate as brownies cool. Cool for at least 20 minutes. Slice into small bars with a sharp knife. This is a little difficult, so clean the knife with hot water if it gets too messy. Serve or wrap individually in wax paper for storing.

These bars are VERY rich, so cut into small pieces! S’mores brownies are yummy and impressive- a crowd favorite! Make some today!
